A few basic questions in preparation for a migration

Afternoon,

 

In preparation for our upgrade to ESX 5.1 from 4.1 I am to have a disaster recovery plan.  Now I have not interacted with ESX (more accustomed to ESXi) too much and apparently there a few key differences one being vicfg-cfgbackup is not supported which makes backing up my hosts configurations rather difficult.  After some research I have seen many state that they just start from scratch and reconfigure well due to the rather large size of my network that option is not really available (over 16 hosts 4 SANs and 120 Vms).  I then stumbled across Profiles under VSphere however after a brief test with it I am not sure that is the right direction.  All I am looking for is the host configuration files as I have all my vms themselves being backed up.  I would like to take a spare server I havem, load 4.1 ESX onto it and import the host config adjust the IP and confirm all my storage, virtual networking, datastors, basically all of my hosts configs carried over.  Profiles might be the way for me but while I continue my research I wanted to raise the question here to receive some guidance.  Thanks
